Valentine's Day is considered by many as a special day to express feelings of affection to loved ones, friends and secret admirers. An offering of chocolate, often believed to be an aphrodisiac, is the perfect gift to show your passion, affection or friendship.

This year we are celebrating Valentine's Day with eight heart-shaped indulgences of chocolates and truffles that are created in the language of love:

Strawberry: A Belgian couverture saturated with creamy ripe strawberry filling.

Cookies 'n Cream: A fine dark chocolate crunch with a smooth white filling.

Pink Lemonade: A tart lemon cream ganache, sweetened with a touch of wild strawberries and coated in Swiss white chocolate.

Palet d'Or: Intense dark chocolate beautifully garbed in gold.

Tahitian Vanilla Caramel: Creamy milk chocolate filled with a buttery caramel center that oozes the essence of vanilla beans.

White Chocolate Raspberry: Fresh raspberry chocolate lends a luxuriant berry flavor to this gourmet white chocolate temptation.

Peanut Butter & Jelly: Fresh strawberry jam and smooth peanut butter, coated in fine Swiss milk chocolate.

Passion Fruit: A fine dark chocolate that opens to a burst of fruit-infused dark chocolate ganache.

Each heart or box will contain a selection of Valentine's themed chocolates, as well as a variety of our freshest creations. Please note due to high seasonal demand, custom orders can only be accepted when ordering our standard box offerings.

Our Valentine's Day chocolates are available in a variety of sizes, ranging from a small (18) to large (40) piece hearts, 18- and 36-piece boxes, and Valentine's Bears with 10- and 18-piece boxes. Our 40-piece Pink Heart, as well as our 18- and 36-piece boxes, are the only Valentine's chocolates available for sale on our website. All other items are available in our Chocolate Salon.

When speaking the language of Love, our chocolates are really all you need.

Meet The Artisan - Mandy Falchetti



MEET THE ARTISAN
Mandy Falchetti, Pastry Chef


Mandy's interest in culinary arts was piqued in her Kittanning, Penn. high school home economics class. So it was only logical that she attend the Academy of Culinary Arts at Indiana University of Pennsylvania. The school arranged an internship at The Ritz-Carlton, Naples, Fla. under the tutelage of Executive Pastry Chef Norman Love. Mandy was able to develop her internship into a permanent position in the pastry kitchen at The Ritz, where she remained for five years.

In 2001, a new chocolate manufacturing facility, Norman Love Confections, opened in Fort Myers, Fla., and Mandy left the Naples hotel to work with her mentor, Chef Norman.

Today, Mandy works with the team of artisans to oversee our pastry and baking, available only at our Chocolate Salon.

Chocolate Mousse Recipe



CHOCOLATE MOUSSE WITH A
RASPBERRY BRULÉE CENTER


Raspberry Brulée Center
· 4 1/2 oz. heavy cream
· 4 1/2 oz. raspberry puree
· 2 oz. egg yolks
· 1 3/4 oz. sugar
· 1/8 oz. gelatin sheet
Place the heavy cream and raspberry puree in a pot and bring it to a boil.
Once that has come to a boil, combine the egg yolks and sugar and slowly whisk in.
Constantly stirring, cook the mixture until it has reached 180°F.
Strain the mixture and add the bloomed gelatin.
Place the mixture into a small mold and place into the freezer to allow it to set.

Chocolate Mousse
· 7 oz. heavy cream
· 7 oz. dark chocolate
· 14 oz. heavy cream, soft-whipped
Whip the larger amount of heavy cream to soft peaks and reserve.
Place the smaller amount of heavy cream in a pot and bring it to a boil.
Once the cream has come to a boil, pour it over the chocolate that is in a large bowl.
Stir the cream and chocolate until everything is combined.
Fold into the chocolate half of the soft whipped cream and whisk together.
Fold in the remaining soft whipped cream and fold everything together.

Final Steps
Fill your desired dish with the chocolate mousse half of the way full.
Place the frozen raspberry brulée into the chocolate mousse.
Fill the remaining dish with the chocolate mousse.
Place the dessert into the refrigerator to set.

THE CHOCOLATE SALON


The Chocolate Salon offers an intimate setting to enjoy the sweet life, with fresh pastries, coffees, lattes and smoothies, along with the ultimate selection of chocolates and chocolate specialties. It's a must-do chocolate experience open Monday through Friday, 7:30 a.m. to 5:30 p.m., and on Saturdays from 7:30 a.m. to 5 p.m.
