On Good Friday,
with the assistance of several young patients at The Children's Hospital of
Southwest Florida at HealthPark Medical Center in Fort Myers, I selected the
winners of the Bunnies for Babies chance drawing. These eight lucky individuals
each won a three-foot tall, 15-pound edible egg:

MEET THE
ARTISAN ALAN PITOTTI ASSISTANT MANAGER, CHOCOLATIER |
A native of
Pennsylvania, Alan received a culinary arts diploma from Northampton Community
College in Bethlehem, followed by an associate degree in baking and pastry arts
from the Culinary Institute of America in Hyde Park, N.Y.
After graduation,
Alan joined The Hotel Hershey in Hershey, Penn., as pastry sous chef
specializing in the production of desserts for two restaurants, banquets,
weddings, and room service. Alan then moved to Philadelphia's Le Bec-Fin to
work with world pastry champion Philippe Parc.
In 2004, Alan
relocated south to accept a position at Norman Love Confections to work with
one of the country's top pastry chefs where he oversees chocolate production
and creates new chocolate novelties, bark, bars and toffee.

STRAWBERRY
MOUSSE WITH LEMON-LIME CREAM |
· 75 g. lemon juice ·
24 g. lime juice · 500 g. cream · 138 g. sugar · 8 1/2
strawberry gelatin sheets · 1 lemon,
zest · 1 lime, zest
Heat the lemon and
lime juices. Whip the cream, sugar and zest to soft peaks. Add the melted
gelatin to the heated liquid. Fold in quickly half of the whipped cream to
the heated liquid. Fold in the remaining half of the cream. Fill the cup
with the cream and refrigerate.

offers an intimate setting to enjoy the sweet life, with fresh pastries,
coffees, lattes and smoothies, along with the ultimate selection of chocolates
and chocolate specialties. It's a must-do chocolate experience open Monday
through Friday, 7:30 a.m. to 5:30 p.m., and on Saturdays from 7:30 a.m. to 5
p.m.
